Nestled in the heart of Newcastle’s CBD, this heritage hotel offers a blend of modern luxury and historic charm across 104 guest rooms, a renowned restaurant and bar, and a vibrant rooftop venue. The location provides a scenic commute with stunning sea views and is positioned within the lively East End Village.
We are seeking a visionary Head Chef to lead the culinary direction for this prestigious hotel. This is an exciting opportunity for a natural leader who can infuse creativity and passion into the culinary offerings, enhancing the guest experience at every touchpoint.
Key Responsibilities: - Lead and inspire the culinary team across various dining venues including the signature restaurant and bar, rooftop bar, in-room dining, and events.
- Develop and maintain innovative menus, driving seasonal changes and maintaining a bar & grill concept at the signature restaurant.
- Manage kitchen operations including roster preparation, recruitment, training, and development of kitchen staff.
- Oversee purchasing, stock control, and conduct month-end stock takes with weekly tracking.
- Ensure compliance with WH&S, FSS, and HACCP standards, maintaining a safe and compliant kitchen environment.
- Exhibit encyclopedic knowledge of food and cooking techniques, with the ability to cost all dishes accurately.
- Foster a professional and positive culture within the team, emphasizing hands-on problem solving and exceptional service delivery.

Skills & Experience - Proven experience in a similar role, preferably in a high-volume kitchen.
- The ability to work efficiently under pressure while maintaining service excellence.
- Exceptional presentation and communication skills.
- A collaborative team player attitude with a hands-on approach.
- Comprehensive knowledge of current food and kitchen trends.
- Relevant qualifications plus at least two years of relevant work experience, or three years of relevant work experience without qualifications.
