The Role
An exciting opportunity for a polished and passionate Head Sommelier to step into a key leadership role at one of Brisbane’s most acclaimed and high-energy dining destinations. Known for its elevated energy, refined service and premium food offering, this venue delivers a fast-paced, high-volume dining experience while never compromising on polish.

This is a hands-on, floor-first leadership role for someone who lives and breathes world-class wine service. We’re after the best of the best – think starred, hatted or internationally acclaimed venues. You’ll lead with presence, set the tone on the floor, and drive elite standards across a fast-paced and ambitious team.

What You’ll Be Doing
  • Leading the wine team and delivering floor-focused wine service during busy peak services
  • Hosting with confidence—engaging guests, upselling, and creating memorable experiences
  • Curating and managing the wine program, balancing guest appeal and profitability
  • Working closely with senior leadership to maintain and evolve the beverage culture
  • Conducting tastings, meeting with suppliers, and exercising autonomy in product selection
  • Overseeing stock management, inventory, supplier relationships, and beverage cost targets
  • Supporting staff training and development, ensuring high standards across the team
Who We’re Looking For
  • A confident, service-driven sommelier with strong floor presence and premium wine sales ability
  • WSET Level 3 minimum (Diploma or Advanced preferred)
  • Experience leading a wine team in high-volume, polished environments
  • Naturally charismatic and composed, with high personal presentation standards
  • Flexible availability across a rotating roster, including weekends
