Exec/Head Chef | Perth_Australia

Our client is seeking a passionate Exec/Head Chef to lead their busy kitchen operations. Stunning resort in the South West. Salary $90-$100k + super.

The Venue:
Located in Dunsborough, this gorgeous resort is nestled on the beachfront amidst landscaped gardens and lakes and at the gateway to the famous Margaret River Region.
The Resort comprises 200+ rooms including  hotel and apartments. Outlets include a Café and Brasserie, bars and extensive conference facilities for up to 600 people.
  
The Role:
The Exec/ Head Chef will oversee the operational management of the hotel’s kitchen and will be fully responsible for developing the reputation of the hotel through the production of excellent quality food.
Key responsibilities include:
  • Inspire your kitchen team, displaying exemplary behaviour at all times and a hands-on approach to leadership
  • Be innovative, continually looking for ways to wow guests and challenge the team to create exciting and contemporary menus
  • Ensure the consistent production of high-quality food through all hotel food outlets
  • Develop positive customer relations through interacting with guests and being the face of the kitchen
  • Develop sound and long-lasting relationship with suppliers, ensuring a win-win scenario
  • Encourage sound relationships based on trust with other departments in the hotel
  • Manage department operations, including budgeting, forecasting, resource planning, food costs and waste management
  • Manage all aspects of the kitchen including operational, quality and administrative functions
  • Actively seek verbal feedback from customers on a regular basis and respond to all guest queries in a timely and efficient manner
  • Ensure adequate resources are available according to business needs
  • Control costs without compromising standards, improving gross profit margins and other departmental and financial targets
  • Ensure team members have up-to-date knowledge of menu items, special promotions, functions and events
  • Ensure that staffing levels are maintained to cover business demands
  • Recruit, manage, train and develop the kitchen brigade, constantly building a highly engaged and productive team
  • Comply with hotel security, fire regulations and all company and state health and safety and food safety legislation
  • Ensure maintenance, hygiene and hazard issues are dealt with in a timely manner
  • Be environmentally aware and constantly looking for ways to decrease our environmental footprint
