A brand-new Italian dining experience is preparing to launch, and we're on the hunt for a Head Chef ready to lead the charge. This is your opportunity to take creative ownership of an opening from the ground up – from menu development and supplier sourcing to team building and operational leadership.
We’re not looking for a backseat chef. We want someone who thrives in the heat of service, sets high standards, and knows how to run a kitchen that balances creativity, quality, and commercial success.
The Role You’ll be responsible for the complete back-of-house operation including:
- Leading all aspects of kitchen setup and service for the venue launch
- Designing the start-up and seasonal menus, including costing, portion control, and recipe documentation
- Building and mentoring a high-performing kitchen brigade
- Ensuring smooth day-to-day operations, including rostering, training, and compliance
- Monitoring and achieving key financial targets including food costs, wages to sales, and profit margins
- Implementing best-practice systems across food safety, WHS, and HACCP compliance
- Driving innovation that keeps the offer fresh, market-relevant, and financially sound
- Leading by example – this is a hands-on, on-the-pans leadership role
What You Bring - Proven experience as Head Chef or Senior Sous in a high-volume, quality-driven venue
- Deep knowledge of Italian cuisine with a strong understanding of modern food trends
- Experience opening or relaunching a venue highly desirable
- Strong leadership skills with the ability to train, develop and retain staff
- Solid financial acumen, confident working with P&Ls, COGS, GP, and labour targets
- Excellent organisation, planning, and problem-solving abilities
- A passion for excellence and an unshakable commitment to quality and consistency
- Strong understanding of compliance, WHS, and food safety regulations
