THE VENUE
 
This is a premium rooftop bar that seamlessly blends a dining room, rooftop seating, and an outdoor terrace into one flagship destination. Because it transitions across these spaces throughout the day, it demands dynamic service rhythms and a Bar Manager who can keep the entire floor holding together beautifully.

THE ROLE
 
This is a genuinely complex role, and they are not going to pretend otherwise. You'll own the cocktail program and the bar operation across the entire rooftop experience. The dining tables ask for refinement, the bar area wants energy, and the terrace needs its own vibrant personality, and you need to bring all of it, every service, every shift.
 
This role is for someone who combines genuine mixology depth with the operational capability to run a high-profile rooftop destination. If you're that person, we want to hear from you.
  • Own and develop the cocktail program across the full rooftop layout, from the dining room to the outdoor terrace.
  • Lead and develop the bar team, building a genuine culture of craft and consistency.
  • Manage COGS, stock, and par levels across a premium and high-volume bar operation.
  • Work closely with the kitchen and FOH teams to deliver a seamless guest experience.
  • Contribute to programming, seasonal menu updates, and the ongoing evolution of the venue's beverage identity.
  • Report into the Group Ops Manager with full support from group leadership.
WHAT YOU'LL NEED
  • Real mixology credentials - competition background, program development experience, or deep craft cocktail knowledge.
  • The operational experience to match. COGS, rostering, team management, multi-format service, not just great drinks.
  • Demonstrated ability to lead a team across different service environments and hold standards across all of them.
  • Comfortable in a premium, Japanese-inspired venue environment.
  • Hungry enough to take on a demanding role and grow with it. This isn't a role for someone coasting.
  • WSET, spirits qualifications, or Japanese whisky/sake knowledge all genuinely valued.
