THE VENUE
This is an established restaurant with a wine list that means something. Around 250 bottles celebrating small growers, natural and low-intervention producers, and a strong Burgundy section. The list has been built with care and intention and there is genuine room to develop it further, have fun with it, and make your mark on it.

This is not a passive list-management role. The venue has a floor team that needs to be brought on the journey, and a Group Sommelier who will back you properly.
THE ROLE
The current Head Sommelier is moving to a new venue opening within the group, so this is a real opportunity with real handover time and a genuinely supportive structure to step into. You'll take ownership of the list, drive floor sales through team engagement and training, and work collaboratively with the Group Somm on ongoing list development.

- Own and develop the wine list (250 bottles) in collaboration with the Group Sommelier
- Lead wine training and sales coaching across the floor team
- Drive wine engagement, conversion, and WBTG execution
- Shape floor team wine culture from the ground up
- Report into the Group Sommelier with significant autonomy on list and training
WHAT YOU'LL NEED
- Proven Sommelier experience managing and developing a medium-format wine list
- Strong knowledge of small growers and natural/low-intervention producers
- WSET or CMS background a bonus, but attitude and willingness to grow valued equally if not more.
- A natural teacher and communicator who can make wine exciting for a service team
- Energetic, collaborative, not precious. Someone ready to take genuine ownership
