THE ROLE
This isn't a conventional GM role. The Precinct GM has full autonomy over the critical path - glassware, cutlery, table mapping, training, team build, the lot. You're not waiting for sign-off. You're working with Group Ops to make the decisions in the pre-opening sprint.

- Lead the full pre-opening critical path across both venues - from concept execution to team build to opening night.
- Own all F&B operations across a 115-seat Japanese-Peruvian ground floor and a late-night basement cocktail bar.
- Build, train, and develop teams from the ground up.
- Drive revenue and hit SPH targets while managing labour and COGS across two concepts.
- Manage the complexity of a 4am liquor licence, live entertainment program, walk-in venue culture, and walk-in dress code - simultaneously.
- Report directly to Group GM and Group Ops.
- Proven GM or multi-site operational experience in an independent premium hospitality environment - NOT hotel management background.
- The grit and stamina to build two venues from scratch and sustain through a demanding post-opening period.
- Deep F&B operations knowledge: stocktake, menu engineering, par levels, COGS, rostering. The full picture.
- Experience with late-night operations, live entertainment, and/or complex multi-concept venues.
- Comfortable in a culturally diverse environment - the guest mix and team reflect the breadth of Sydney's hospitality scene.
- Self-sufficient, autonomous, and resourceful. You find solutions, not excuses.
