We are seeking an exceptional Restaurant General Manager to lead a premium Japanese-inspired dining and cocktail destination in the heart of Sydney CBD. This flagship venue combines refined sushi, elevated share-style dining, and a sophisticated cocktail program, transitioning from premium dining service into a vibrant late-night experience with DJs and curated music.
This is a senior leadership role with full responsibility for venue performance, culture, and guest experience in a high-volume, premium environment.

The Role As Restaurant General Manager, you will take full ownership of the venue’s operations, financial performance, and team leadership. You will drive commercial success while ensuring an exceptional and consistent guest experience.
Working closely with ownership and senior stakeholders, you will implement strategy, build structure, and lead a high-performing hospitality team.
Key Responsibilities
  • Lead all FOH operations and daily venue execution
  • Oversee full financial performance including P&L, labour, and GP%
  • Manage stock control, ordering, suppliers, and cost efficiency
  • Ensure compliance with licensing, WHS, and regulatory standards
  • Recruit, train, and develop FOH leadership and service teams
  • Drive service excellence across lunch, dinner, and late-night service
  • Build a strong, accountable, high-energy team culture
  • Collaborate with ownership on strategy and operational improvements
About You
  • Proven experience as a Restaurant General Manager or senior Restaurant Manager in premium, high-volume venues
  • Strong financial and operational acumen (P&L, labour, cost control)
  • Hands-on leadership style with strong floor presence
  • Ability to manage both refined dining and high-energy service environments
  • Strong leadership, communication, and team development skills
  • Calm, structured, and effective under pressure
  • Available to work a 7-day roster including nights and weekends
