THE ROLE
This is a role for someone who loves hospitality in the truest sense. The local dining crowd is food-literate, loyalty-driven, and expects the best of the best. You need to walk in every service and light the room up, then do it again tomorrow.
- Lead all FOH operations across a two-level premium venue. Setting and maintaining high service standards every service.
- Build genuine guest relationships and foster the kind of loyalty that makes a neighbourhood restaurant irreplaceable.
- Work closely with the Executive Chef on creating a seamless kitchen-floor experience.
- Drive beverage sales across a specialised Japanese-Italian list. Think sake, Japanese whisky, Italian wine.
- Recruit, train, and develop a high-performing FOH team that understands what premium service actually feels like.
- Own rostering, labour management, and operational compliance.
- Experience as a Restaurant Manager or senior floor leader in a premium Sydney venue.
- Japanese food knowledge is essential. You understand the cuisine, the culture, and why it matters.
- Genuine warmth and the ability to build real connections with guests.
- Beverage confidence across a Japanese-Italian list - sake and Japanese whisky knowledge is a strong advantage.
- WSET or sake study background highly regarded but not essential.
- An understanding of the local dining demographic.
- $85,000 - $90,000 + super + generous group dining discounts
