Venue & Bars Manager

THE VENUE
 
A late-night basement bar with its own rules. Walk-in only. Dress code. Live entertainment. Classic cocktails done properly. This isn't a cocktail bar that plays it safe, it's a venue with genuine personality, and it needs someone who matches that energy and can build it from nothing.
 
THE ROLE
 
This is a combined Venue Manager and Bar Manager role - one person, full ownership. You'll help build the cocktail program and run the floor as well as oversee the bar program of the restaurant upstairs. You'll manage the team and set the standard. You'll be the heartbeat of the basement.
  • Build and own the classic cocktail program - sourcing, menus, specs, training.
  • Run all floor operations for the basement venue including staffing, rostering, and service standards.
  • Hire, train, and develop a team of across late-night shifts.
  • Manage the walk-in environment and work alongside the live entertainment program.
  • Own COGS, stock management, and compliance (RSA, licensing) for the venue.
  • Report into the Precinct GM and collaborate closely with the ground floor operation.
WHAT YOU'LL NEED
  • Genuine mixology credentials and experience building or significantly developing a cocktail program.
  • Operational experience managing a late-night bar or multi-format venue, not just making good drinks.
  • Comfortable building a team from scratch and leading them through a high-pressure opening period.
  • Experience with walk-in, high-volume, late-night environments. You know how door culture, dress codes, and live acts work.
  • COGS and stock management experience - you can read a P&L and act on it.
  • Hungry, adaptable, and genuinely excited by building something new.
