THE VENUE
This is the crown jewel of the newly renovated precinct, approximately 170 seats with marble finishes and gold accents, setting the tone for an atmosphere of elevated, modern coastal sophistication. The culinary direction centres on premium open fire cooking, showcasing quality meats and fresh seafood, backed by a curated and extensive wine program.
THE ROLE
This is a senior leadership role with full accountability across the entire venue lifecycle, from pre opening planning and recruitment through to opening execution and long term operational excellence. You'll be building a high performing team, embedding service standards from day one, and delivering a guest experience that consistently reflects premium fine dining.
- Lead end to end pre opening setup including recruitment, onboarding and team structure development.
- Oversee venue readiness across systems, service flow, reservations and operational planning.
- Lead from the floor, building, training and mentoring a high performing, service driven team.
- Own labour control, COGS, forecasting and operational efficiency, working closely with kitchen and bar leadership.
- Report into the Precinct General Manager with full support from group leadership.
- Proven experience as a Venue Manager, General Manager, or equivalent senior leader within a premium or fine dining environment of similar scale.
- Pre opening experience is a strong advantage; venue setup, recruitment, service design or launch execution.
- A strong understanding of elevated food and beverage service standards.
- A hands on leadership style with genuine presence on the floor.
- Commercial awareness, with strong operational and financial acumen.
- Current RSA certification and full Australian working rights.
- Up to $120,000 plus super, depending on experience.
- No more than 45 hours a week on a flexible roster.
